Any idea which client for the mac lets you do this? Adium lets me create a room but configure is not supported. iChat doesn't support rooms well at all (won't even let you specify a password to enter a room)

The "owner" of the room can change the configuration. How to do this differs by client; usually there is a menu or such when you enter the room.
