If you look under book/tutorials then follow the links after "Building Ejabberd Modules (by Anders Conbere):" each of the links are parts of series that cover a lot of module development from "hello world" to a full-blown bot. Just keep going through each part.

The process-one docs are inexplicably bad. If people want to extend their product you think they would want to encourage that.
