На Windows Server 2008 в организации установил ejabberd-2.1.11, не получается настроить так, чтобы в клиенте в списке контактов сначала показывалась фамилия, а затем имя и отчество контакта. Клиент - Spark 2.6.3.

Хоть я не настраивал, но думаю что все дело в том что у вам метод аутентификации {auth_method, internal}, а не {auth_method, ldap}.
Другими словами, вы пытаетесь вытащить данные для vcard из ldap даже не подключившись к нему...
