Shared Roster Display Names

I am very new to ejabberd, so forgive me if this has been hashed out before. I did a quick search, but did not see any topics (though Im not exactly sure what I am looking for).

I just set up a new ejabberd server. We have about 80 clients running Pandion. Everyone is connected fine. However, the roster on Pandion shows "firstname.lastname@server.domain.com" I would like the ability to use some sort of "Display Name" instead of this long address. For example, if I have an employee named John Smith, right now he shows as john.smith@server.domain.com in Pandion. I want him to show as "John Smith". Now, I know in Pandion I can right click John and rename him, but that setting only follows me around. I want it to apply to everyone on this server.

Also, I know I can have employees edit their profiles, which will accomplish this, but I'd like to do it on the server end if possible. I am not using LDAP.
