For my understanding: what is the Large number of ERL_MAX_ETS_TABLES in the config-file related to?
- number of users?
- number of concurrent users?
- number of rosters?
compared to only a handfull of MySQL databases?

There is a brief explanation
There is a brief explanation in ejabberdctl.cfg.
This Erlang option isn't related to any of the numbers you mention. Probably you don't need to modify that option at all, as the default value is good enough for any normal usage.
