If I install ejabberd server on my server at work and then install im clients on each computer at work. The computers are all networked with the server, will the im clients be able to connect with the ejabbered server?

Yes, ejabberd will listen in the port 5222 for Jabber clients. It similar to Apache, that listens in port 80 to Web clients.
Make sure to set in ejabberd as 'hosted domain' a proper name, so that clients know how to reach the server machine. And of course the TCP port 5222 must be open in any firewall.
