I have an ejabberd server set up that works correctly. Now i want to be able to have the server keep message history or message archive.

That feature is not implemented in ejabberd. But you can find mod_archive and similar modules in the ejabberd-modules SVN.

we re using mod_log_chat
it has very easy implementation
