Where can I find out about how much ejabberd implements for each JEP e.g. publish subscribe JEP? So I can know what to implement in my client.

unknown versions of jeps
You're right, there's no information on what version and how much of a JEP is implemented in ejabberd, we only know what of them. You can have an approximation of what version is implemented looking at the last modification of the files in ejabberd source code. I'll try to update the protocols table with more info.
On the other part, you don't need to implement all the JEPs published by JSF, or all that ejabberd supports. You will want to implement the JEPs you find interesting for your client :)
