You maybe also can find some details atthe actual code
Otherwise you also can ask on the room or mailinglist if one of the coders is online.

unknown versions of jeps
You're right, there's no information on what version and how much of a JEP is implemented in ejabberd, we only know what of them. You can have an approximation of what version is implemented looking at the last modification of the files in ejabberd source code. I'll try to update the protocols table with more info.
On the other part, you don't need to implement all the JEPs published by JSF, or all that ejabberd supports. You will want to implement the JEPs you find interesting for your client :)
