I am new to the jabber system and I’m looking to use ejabberd as a private chat system but using MSN client / live MSN as the ejabberd client....
First of all is this possible and second how I could change the client connection to the local server that is running ejabberd.
Also if it is possible, due to it being the client application that determines what functions are available, would it still have VoIP and video.

MSN uses a proprietary
MSN uses a proprietary protocol that only runs on Microsoft's servers. Their clients are configured to only connect to their server and only communicate in their proprietary language.
Jabber, on the other hand, is an open standard that many servers speak. Lots of clients use Jabber and there are lots of servers to connect to.
So no, this isn't possible. MSN will not be able to connect to your server, nor will it be able to understand what your server is telling it.
I recommend using a client like pidgin, . Pidgin works well with both jabber and MSN, although I don't think it does VoIP or video.

If there is a mod that will communicate between the msn server and ejabberd then is it not possible to create a mod that allows the msn client speak to the ejabberd server if you redirect the client --- or am i having a blond moment.
